  • RAW CHOC WALNUT BROWNIE Weve made these raw brownies
6 days ago by brownpapernutrition RAW CHOC WALNUT BROWNIE : We've made these raw brownies so many times now but they never get old - seriously does a good chocolate recipe actually ever get old?!?! Thought today sharing the recipe (just below) with you would be a delicious way to jump over the middle of the week together yes? Oh, we also added wattleseed to this batch and they were insane. Wattleseed is an aussie bush native with quite a nutty kind of coffee flavour and it's yummoo with the choc flavours in this raw treat. RAW CHOC WALNUT BROWNIE GF : DF : RSF

  • ZATAR BAKED EGGPLANT GREENS AND BUTTER BEAN PUREE Seriously
16 hours ago by brownpapernutrition ZATAR BAKED EGGPLANT, GREENS AND BUTTER BEAN PUREE : Seriously cannot get over just how delicious this recipe is!!!! All my favourite ingredients and the za'tar flavours with the creamy butter bean puree are next level - butter beans add plant based protein to this dish. Remember protein comes from a variety of sources, and legumes are an incredible source of plant based amino acids - the building blocks for complete proteins. Enjoy folks! CASHEW BROCCOLINI SALAD WITH WASABI DRESSING

Abundance of broccolini in the fridge made way for this creation, plus a wonderful way to start off your week with plenty of green!

Did you know broccoli and broccolini are actually members of the cabbage family and like their family members they demonstrate some amazing anticancer effects – particularly in breast cancer (Murray et al, 2005). These anticancer compounds are called ‘glucosinolates’ and in particular one called ‘indole-3-carbinol’ which we find in broccoli has been shown to slow the growth of both breast and prostate cancer cells (in preliminary studies).

Incredible right? And to think you can munch down on this kind of medicine any meal of the day and it tastes awesome!

So delivering your food as your medicine today is this DELICIOUS dish – CASHEW BROCCOLINI SALAD WITH WASABI DRESSING heeerrrrre you go!

CASHEW BROCCOLINI SALAD WITH WASABI DRESSING

Serves 4

GF : DF : SF : V

3 bunches broccolini, ends trimmed

1/2 large red chilli, deseeded and finely sliced

3 asian shallots, finely sliced, white part only

1 tablespoon sesame seeds, lightly toasted

1/2 cup (75g) raw cashews, roughly chopped and lightly toasted

1/4 bunch coriander, leaves picked and stalks finely chopped

Dressing:

1  1/2 teaspoons wasabi paste

1/4 teaspoon white pepper

3 tablespoons lime juice

3 tablespoons olive oil

sea salt

Boil a large pot of boiling water, drop broccoli into the water for 2 minutes, remove from water and refresh in ice cold water then drain. This will help keep it fresh, green and crunchy. Whisk together all ingredients for the dressing. When ready to serve, simply arrange broccolini on a serving platter, sprinkle with chilli spring onion, cashews, sesame seeds and coriander leaves and stalks. Drizzle with dressing and season with sea salt and serve.
