Choc popcorn slice

To be honest I’m not sure how this one came about – yes there was popcorn in sight but it went from simple popcorn in a bowl to epic popcorn with maple nuts and chocolate and all great things! You don’t have to caramelise the nuts you can pop in just raw if you like. Enjoy!

CHOCOLATE POPCORN SLICE 

Serves about 30 – it is addictive though  so be warned

Gluten free : Dairy Free : Vegan

1 cup mixed raw nuts

2 tablespoons maple syrup

5 cups cooked popcorn

2/3 cup coconut oil

2/3 cup raw cacao powder

4 tablespoons maple syrup

2 tablespoons nut milk

Place raw nuts in a small frypan and add maple syrup, pop on a medium heat on the stove and caramelise, for about 5-6 minutes, tossing throughout to prevent burn or sticking. Transfer to a plate lined with baking paper to harden, wipe the pan clean. Put coconut oil in pan and heat on low to melt. Remove from heat then whisk in cacao, maple and nut milk. Line a large loaf tin with baking paper, add half the popcorn and half the nuts (break them up a bit) to the tin, pour in half the chocolate, toss and repeat. Freeze for about 2 hours, then slice and serve direct from freezer.
