Coco Coconut Pops

If you do one thing for yourself this week in this lurrrrvly rain make these COCO-COCONUT POPS. They are soooooo simple and beyond delicious. Kids and big peeps love them. Eat with some stewed fruits and a drizzle of nut butter or sprinkled on top your porridge or smoothie bowl, straight up, whatever goes – make make makeeeeeee. Recipe is below for you! Gluten and dairy free, can make nut free easily too if it’s a problem! Enjoy – love Jacq xx

COCO-COCONUT POPS

GF : DF : RSF : VEGAN
2 cups quinoa puffs
1 cup buckwheat groats
1 cup flaked coconut
1/2 cup almonds, roughly chopped
4 tablespoons coconut oil, melted
2 teaspoons cinnamon
4 tablespoons raw cacao powder
3 tablespoons maple or sweetener of choice (honey or rice malt fine too)

Heat oven to 170 and line a large baking tray with greaseproof paper. Toss together quinoa puffs, buckwheat groats, flaked coconut and almonds in a large bowl. Whisk together coconut oil, cinnamon, cacao and maple in a small one then combine the two and toss to coat. Spread evenly over the tray and bake for about 10 minutes, toss and bake a further 2-3 minutes or so. Cool on tray then pop in an airtight container! Enjoy!
