Collagen boosting rocky road

Quite possibly the most skin loving rocky road you’ll lay your eyes and mitts on this Easter and beyond. I’ve swapped marshmallows for home made berry and coconut jellies and boosted the chocolate with @healthycareau BIOACTIVE COLLAGEN POWDER to help support collagen formation in your skin, and to strengthen hair and nails.

TRULY a heavenly combination on all levels – nutrition and flavour! Popping the recipe below so you can make it with me.

COLLAGEN BOOSTING ROCKY ROAD

Serves 24

Gluten free  : Dairy Free

1 cup coconut oil, melted

3/4 cup raw cacao powder

3 tablespoons maple syrup

2 tablespoons HEALTHY CARE COLLAGEN POWDER

1 1/2 cups mixed home made berry and coconut jellies+

3/4 cup fresh raspberries

1/4 cup dried blueberries or alternatively apple juice sweetened cranberries

1 cup mixed raw nuts such as hazelnuts, macadamias, pecans

In a large mixing bowl whisk together coconut oil, raw cacao powder, maple syrup and HEALTHY CARE COLLAGEN POWDER until smooth. Line a large square (approx 20x20cm)  baking or cake dish  with greaseproof paper. Layer half the the jellies, raspberries, blueberries and nuts over the base, pour half the chocolate mixture over the top and repeat. Place in fridge to set for 1 hour. Slice into pieces and enjoy! Store in the fridge up to 1 week.
