I've made the healthy variation of rocky road like this for a while but have generally used a grass fed gelatin from IQS, now that I'm using up what's in the pantry and trying to find all plant based solutions it's agar agar on the cards and I'm battling!!!! This overnight oats sesh I soaked the oats in coconut kefir  @remedydrinks  and then topped with coyo and fruits the next morn. Deeeeeelicious and satisfied without a wink of a hunger pang until lunch, not to mention upping the gut lovin fermented food ante with the kefir. Honey and Christmas Spice No Bake Granola bars

Completely obsessed by muesli and granola at the moment, sooooooo of course made total sense to create a scrumptious time saver no bake granola bar recipe hey?!?! I’ve incorporated lots of delicious whole grains, which you can more or less swap and change as it suits you, dried fruits which you can swap for nuts if that’s more your thing, festive Christmas spices like cinnamon, ginger and mixed spice, and bound them altogether with the most divine nut butter and honey combination using Waimete Liquid Clover Honey. 

Waimete Honey is produced by a lovely family in South Taranaki New Zealand. I’ve used their Liquid Clover Honey here however they also have a super heavenly Creamed Clover Honey, Raw Unpasteurised Honey and Manuka honey too. It’s all scrumptious I feel like a little honey bear dipping into their pots. This recipe goes well beyond Christmas too you can just swap out the spices!

Honey and Christmas Spice No Bake Granola bars 

No bake : Vegetarian

Serves 20

2 cups (200g) rolled oats

1 cup (15g) puffed grains (buckwheat, quinoa, rice – your choice!)

1/2 cup (90g) buckwheat groats

1 cup (145g) mixed dried fruits (apple, apricot, peach)

1/4 cup (45g) dried cranberries

1/4 cup (45g) sultanas

1/3 cup Waimete Liquid Clover Honey

3 teaspoons mixed spice

1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 cup almond butter

1/2 cup cashew butter

1/4 cup coconut oil

In a large mixing bowl combine rolled oats, puffed grains, buckwheat groats, mixed dried fruits, cranberries, sultanas and mix. Place Waimete Liquid Clover Honey, spices, almond and cashew butter and coconut oil in a small saucepan and place over low heat to melt together, mixing with a fork as it melts until it is slightly runny. Immediately pour over the grains in the bowl and use a wooden spoon to mix and coat all ingredients well. Line a 24cm square baking dish with greaseproof paper, pour granola bars into the tin and press down well with wet finger tips. Place in freezer to set for 2 hours. Slice and serve direct from freezer.
