Pear and oat slice
One of my early morning pyjama recipe creations right here. Some of my best work done in the early hours hey, that’s why I don’t take a stack of video because 1/ light very dark 2/ain’t no one needs to see my morning face beyond my family 😱 😬🥴
Inspiration for this one came from the fact I couldn’t fit all my oats in the big jar and I didn’t have any spare (horrifying I know when you see how many jars in my pantry!) and looking at a couple of pears that needed to be used quickly! Enter pear and oat slice.
Super yummy, looks warming and tastes it too, simple, quick and great lunchbox friendly slice. Everyone who has tried it so far give their thumbs up… recipe for your weekend baking below.
PEAR OAT SLICE
🍐1/3 cup extra virgin olive oil
🍐1 free range egg
🍐1 tsp vanilla extract
🍐1/4 cup honey
🍐1 tsp ground cinnamon
🍐2 tsp baking powder
🍐1/2 tsp bicarb soda
🍐1 cup rolled oats
🍐1 cup whole meal flour
🍐2 pears (400g) cored and roughly chopped
Heat oven to 180c and line a 20x24cm rectangular cake tin with greaseproof paper. Whisk together oil, egg, vanilla, cinnamon, baking powder, bicarb until creamy. Fold through oats, flour and chopped pear. Pour into lined cake tin and bake for 25-30 minutes. Allow to cook completely in tin before slicing and serving. We got about 15 slices out of this one.
