APRICOT COCONUT CHIA BALLS

Makes 8 lunchbox friendly balls

GF: DF: SF : NUT FREE

 

1/4 cup apricots

1/4 cup shredded coconut

3/4 cup organic rice puffs

1/4 cup coconut milk

1/4 cup white chia seeds

1 teaspoon honey

1/4 cup desiccated coconut, for rolling

 

Combine all of the ingredients except the desiccated coconut in a food processor and blitz until well combined. Portion tablespoon sized amounts into balls and roll into the desiccated coconut. Keep stored in the fridge or freezer in an air tight container for 2 weeks.
