BAKED CAULI WITH SPICES

GF : DF : SF: V : VEGAN : PALEO

Serves 4 as a side

 

1/2 large head cauliflower, cut into florets

1 red capsicum, cut into strips

1/2 teaspoon ground cinnamon

1 teaspoon ground cumin

good pinch sea salt

2 tablespoons grapeseed or coconut oil

 

Preheat oven to 200C and line a baking dish with greaseproof paper.

Place cauliflower and capsicum in the dish, drizzle with oil, sprinkle with salt and toss to combine.

Sprinkle spices over the vegetables then place in oven to cook for 30 minutes.

Serve as is or with fresh picked coriander leaves, finely chopped chilli and a squeeze of lemon.
