Serves 1-2 people
3 eggs, whisked
1 teaspoon vanilla extract
1 banana mashed
1 tablespoon raw cacao powder
1/2 teaspoon coconut oil
100g natural organic yoghurt or coconut yoghurt for DF
1 teaspoon honey
1 tablespoon peanut butter
pinch cinnamon
1/2 banana, additional (optional), sliced for top
Whisk together eggs, vanilla, banana and cacao. Warm a large fry pan on medium heat on the stove and swirl coconut oil around the pan. Pour in egg mixture and cook 4 minutes on one side, flip and cook a further minute on the other, be careful not to burn the omelette. Whilst omelette is cooking stir honey and yoghurt together. Transfer to a plate, top half the omelette with most of the yoghurt mixture and dot the peanut butter around, fold the omelette over the top and finish with remaining yoghurt, banana slices, cinnamon and serve.
+ Serves 1-2. I definitely couldn’t eat this all on my own, probably one I would share with a girlfriend however, I did serve it up to male friend and he devoured the lot. Best to scale it back if cooking for 1. Enjoy!
