3 cups five:am Organics Greek Yoghurt (or 2 cups yoghurt + 1 cup cream)
1/4 cup maple syrup
1 cup mixed nuts, roughly chopped (pecans, macadamias, pistachios)
1 cup mixed dried fruit (organic apricots, raisins, currants, cranberries)
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon mixed spice
Optional to serve : roughly chopped Christmas fruit cake, raw chocolate (melted to drizzle), fresh berries
Line a 1L capacity stainless steel or plastic bowl with glad wrap, with enough to hang over the edges. In a separate large bowl, combine all ingredients and mix to combine. Pour into lined bowl, fold over the edges and place in freezer to set overnight. Allow to thaw a little before serving. Serve drizzled with molten raw chocolate and chopped Christmas cake. Store in freezer up to 2 weeks.
+ You can make this pudding using all greek yoghurt or mix it with a cup of cream which will make it just that little bit more decadent and creamy
