2 field mushrooms or 1 large mushroom
1/2 small red chilli, seeds removed, finely chopped (or to taste)
1 tablespoon olive oil
1 teaspoon thyme leaves
sea salt and black pepper
To serve: buckwheat bread, mustard, beetroot relish, sauerkraut, tomatoes
Preheat grill to medium high and line a baking tray with greaseproof paper.
Srcub mushrooms to remove any dirt, then place stalk side up and drizzle with olive oil and sprinkle with thyme leaves and chilli.
Place under grill to cook 8 minutes.
Remove from oven and serve.
