Second pour tea loaf

Makes 1 loaf, to serve 10

Gluten free : Dairy Free : Vegetarian

350ml second or third pour english or earl grey tea (leaves steeped the pot once for you to enjoy and steeped a second time for bread!)
350g mixed dried fruit
1 free range egg
1/4 cup coconut sugar
2 teaspoons ground cinnamon
285g GF flour (I used half buckwheat half brown rice)
2 teaspoons baking powder

Pour tea over dried fruit and allow to soak overnight or for 6 hours.
When fruit is soaked, preheat oven to 160C and line a loaf tin with greaseproof paper.
Whisk egg, coconut sugar and cinnamon into fruits and tea.
Add flour and baking powder and mix, pour into loaf tin and cook 70-80 min. Cook in tin then dance dive in!
