STRAWBERRY GOAT CHEESE AND ENDIVE SALAD

Serves 4

 

1 punnet (250g) strawberries, sliced

1/3 cup dried, apple juice sweetened cranberries

3 cups curly endive or watercress, picked

1/2 cup mint leaves picked

1/2 cup sunflower seeds, toasted

100g goats chevre, crumbled

good quality extra virgin olive oil

balsamic vinegar

sea salt and black pepper

 

On a large serving platter or bowl, arrange strawberries, cranberries, endive, mint, sunflower seeds and goat cheese. Drizzle with extra virgin olive oil and balsamic, season with salt and pepper and serve.
