SUMMER CHOPPED SALAD

GF :  SF : V

Serves 4 as a side, or 2 people with some extra protein

 

2 lebanese cucumber, seeds removed, 1cm diced

300g cherry tomatoes, quartered

2 mango cheeks, 1cm diced

1/2 small spanish onion, finely diced

2 cobs corn, kernels removed from cob

1/2 cup coriander, leaves picked

1/2 cup dill, leaves picked

 

Dressing:

1/2 cup five:am Organics Natural Yoghurt

1-2 tablespoons lemon juice

1/4 cup finely mint leaves, finely shredded

good pinch sea salt and ground black pepper

 

Combine all ingredients for salad in a large bowl and toss lightly. Serve with the yoghurt dressing on the side for guests to add themselves or spread around the platter and top with the salad to serve.
