Makes 300ml
2 cups tightly packed basil leaves
1/2 cup sunflower seeds
2 cloves, garlic, minced
3/4 cup olive oil
3 tablespoons lemon juice
1 tablespoon apple cider vinegar
Salt and pepper to taste
Combine all the ingredients in the Breville Boss To Go or a high powered blender/food processor and blitz intermittently to combine. Transfer to a glass jar and keep stored in the fridge.
+ To ensure the pesto blends well this recipe uses more liquid,; a combination of olive oil, lemon juice and apple cider vinegar. This creates a looser pesto.
++ You may need to stop and stir half way to ensure an even blend.
