MEAT FREE MONDAY : SAUTEED BRUSSELS WITH GARLIC BEANS

Meat Free Monday was a concept developed some years ago now, firstly in the US, but it has taken off throughout Australia and the United Kingdom. It’s an insanely inspiring way to get┬ápeople to cook, create and eat more diversely with the abundance of plants we have at out fingertips. We’re right on board Meat Free Monday in the Brown Paper Kitchen and often post a little recipe inspiration on a Monday for the tribe. Kicking off this week is this delicious protein, fibre and nutrient rich meal which absolutely does not compromise on flavour whatsoever. Cook as per the recipe or feel free to add in some nutritional yeast, a great source of B vitamins for vegans or pecorino/parmesan as you wish.

BRUSSELS WITH GARLIC BUTTER BEANS

GF : DF : SF : V

Serves 4 as a side

3 tablespoons olive oil

400g brussel sprouts, halved

400g tin butter beans, rinsed and drained

3 cloves garlic, finely chopped

1 teaspoon lemon rind

good pinch sea salt

Opt: nutritional yeast, pecorino or parmesan, to taste

Place frypan on medium heat, add olive oil then brussels, pop lid on and cook for 8 minutes.

Toss garlic, lemon zest and beans through brussels and cook uncovered a further 6-8 minutes or until brussels are lovely and golden.

Season with sea salt and lemon juice, add nutritional yeast or cheese if desired and serve.
