EGGPLANT PARMIGIANA WITH A PROTEIN CHARGED TWIST 

CAULIFLOWER STEAK AND EGGPLANT PARMIGIANA

Bake halved eggplant rubbed in extra virgin olive oil for 45minutes. Layer onto serving board with finely sliced basil, rocket, parsley, cherry tomatoes, and generously shave parmesan over the top. Season with sea salt and black pepper and serve.
