
Apricot coconut logs
Growing up I remember going to the tuck shop at school with only about 20c and being able to buy a handful of these delicious apricot logs. There were little fruit balls too, so yum. The minute I tasted the ones I whipped together here alllllllll those memories came flooding back, they are so so SO d-lish. Big and little peeps love them. Enjoy ☺️
APRICOT COCONUT LOGS
1 cup raw cashews
1.5 cups shredded coconut
1 cup dried apricots
2 tbsp maple syrup
3 tbsp coconut oil
2 tsp vanilla extract
1/4 cup water
Place all ingredients in a food processor and blitz to a dough. Press into a lined loaf tin and set in freezer 1 hour. Slice into 20 pieces and enjoy! Store in fridge.
+ you can swap quantities of cashews and coconut depending on what you have handy
