We’re lucky enough to be sharing a sneak peak into Luke’s new cookbook – Eat Clean this week and the gorgeous clean living ambassador gave us a little more insight into his philosophy, life and love of food. Read on friends…
Briefly describe who you are and what you do?
Having spent over ten years as a personal trainer down on Bondi Beach, I really wanted to reach a wider audience and share my passion for a healthy lifestyle! I saw the commercial for My Kitchen Rues and ended up getting on to represent NSW! It certainly turned my life around. It gave me a platform to share healthy recipes, lifestyle tips and inspire Australians to live a happier and healthier lifestyle. So now a numbers of years on since the show I have released 7 cook books, worked with Angelina Jolie and travel the country trying to encourage people to be the best version of themselves.
Have their been any moments that stand out as a turning point for your health?
Absolutely! Throughout the MKR filming process I gained 10kgs. I was eating the wrong types of foods with catering, not exercising and living in a highly stressful state all the time with little sleep and being in such an intense competitive environment. I didn’t feel great, wasn’t looking my best, and felt unfit and lethargic. I had to turn it around. I was going to work each day trying to inspire others to live a happier and healthier lifestyle and couldn’t keep on top of it myself. It was at this point I started to follow a very paleo style of lifestyle and my life turn around. I had more energy, clearer skin, weight release and I was generally just healthier and happier. I celebrated real foods in their most natural state and my body thrived, and most of all, my mind was clear, bright and switched on.
What does a day on a plate look like for you?
I start each day with an organic cup of coffee with home made almond milk, followed by a breakfast of poached eggs, avocado and bacon on paleo toast. Lunch is usually a warm salad made up of sautéed brussels sprouts, broccoli and cauliflower and some form of clean protein, and dinner is usually fish with oven roasted sweet potato or crispy brussels sprouts cooked in bacon! Yum! I snack on home made raw chocolate that I make.
What is your favourite meal/recipe? Can be naughty or nice!
For me it is all about my easy lamb shoulder. Its rich, moorish, and really impresses. Served with cauliflower and garlic puree it sings on the tastebuds. It is a restaurant quality dish anyone can create at home.

Top three things to do in Casuarina or surrounding area?
- Take a stroll on the beach bare feet and take in the fresh ocean air. There is no buildings in sight from the sand, hardly anyone around, just the soothing sound of the waves crashing.
- Head to Mt Warning and climb to the summit! It is one of the best walks you’ll ever do! The last section of the climb is just like rock climbing, you’ll love it!!

Most challenging moments writing your book – EAT CLEAN
For me the major challenge of writing a book is finding a balance between sweet and savoury! I find it easier to write sweet recipes as I have such a massive sweet tooth. And most of the savoury dish’s I make I never really measure what I am using so it can be harder to translate onto the page when i usually just cook by sight and taste.
What are three foods you can’t life without?
Cauliflower: I think I nearly eat one cauliflower a day! I oven roast the florets in coconut oil and spiced until crispy like chips! HEAVEN!!!
Brussels Sprouts: SOOO good, pan fried in bacon until crispy!
Raw Cacao: It is the cornerstone ingredient of all my baking and raw treats! HEAVENNN!!!!
