HONEY PEACH AND HAZELNUT ROAST

Cooler Autumn weather just cries out for a roast, right? And what better way to use up peaches (or any stone fruit really) than with a big, sweet, after dinner family roast? Just a drizzle of honey on this one as roasting the fruit makes it even sweeter and more delicious. And hazelnuts are an unbeatable combination. Getting your two serves of fruit a day just got a whole lot easier :). Serve with coconut ice cream or yoghurt. Enjoy!
Honey peach and hazelnut roast
(GF, DF, VEGAN)
5 large peaches
2 tbs hazelnuts chopped roughly
1 tbs honey
1 tbs coconut oil
1/2 tsp cinnamon
Coconut yoghurt to serve
Oven to 180*. Halve peaches and cut into quarters. Line peaches in rows in a baking tray. Drizzle on honey and coconut oil. Scatter hazelnuts on top. Sprinkle over cinnamon. Bake for 25 mins until golden and bubbly. Serve with coconut yoghurt and a sprinkle of cinnamon. Enjoy!
