Lemon apple cake

Super delicious LEMON APPLE CAKE / LOAF. This cake / loaf has kept really well and reheats with a quick zap in the microwave. Lovely with a dollop of yoghurt. Could make plant based with flax eggs too.

3 medium apples, cored and roughly chopped
1/2 cup extra virgin olive oil
1/2 cup coconut sugar
3 free range eggs
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 teaspoon lemon rind
2 cups wholemeal spelt flour

Heat oven 180c. Line a 20cm diameter round cake tin / 15x20cm loaf tin with baking paper. Whisk together oil, sugar, eggs, baking powder, cinnamon, lemon rind until creamy. Add apple and mix. Stir through flour until we’ll combined. Pour into lined tin and bake 45-55min. Cool in tin and enjoy!
