
Pack a healthy lunchbox with me
It can be a tad uninspiring packing lunchboxes day in day out, especially at the half way point of the year so let me give you some help with it! I like to make lunchboxes equally colourful, nutritious and top notch delicious – watch to see how I do it.
RECESS: Mix of sweet and savoury. Our kids love a radish, so good hit of veggies there (choose one yours love), a protein source from crispy fava beans or chickpeas and a delicious but NOURISHING, energy sustaining treat. OF COURSE, I’m leaning heavily on the Banana Oat Superfood Cookies I’ve made in partnership with @mt_elephant – they’re literally 5 minutes to prep and 15 minutes in the oven to bake. They’ve got a bangin’ mix of whole food ingredients that I love including chickpeas, brown rice, oats, dates, coconut, hemp seeds and buckwheat, but don’t have the crazy preservatives, additives, and highly refined sugars we typically find in many cookies on shelf – I mean, are you baking them yet????? Available now at your local Woolworths!
LUNCH: Fresh whole grain or rye bread sandwich with avocado and cheddar (sometimes hummus, veg again, easy to take quick, small bites to ensure kids ACTUALLY eat the veg, and a kiwi (or half or whatever fruit they love here).
