Dairy free : Nut free : Vegan
Makes 20 bars
1 cup (170g) dried dates
1 cup rolled oats
1/3 cup raw cacao powder
1/4 cup sunflower seeds
2 tablespoons sesame seeds
2 tablespoons chia seeds
1/3 cup coconut / soy or oat milk
2 teaspoons vanilla extract
1 cup shredded coconut
1 teaspoon cinnamon
1 tablespoon maple syrup
2 tablespoons melted coconut oil
Soak dates in boiling water for 10 minutes then drain.
Place all ingredients in food processor and blitz to a doughy consistency.
Press into lined 16x24cm baking dish and place in freezer to set for 2 hours.
Slice and serve.
Keep stored in fridge up to 1 week and freezer up to 3 weeks.
