Makes 4 small frozen ice pops
1/2 cup coconut cream
1 banana, sliced
1/2 teaspoon vanilla
3 passionfruit
Combine coconut cream, 1/2 the banana pieces vanilla and pulp of 2 passionfruit in a high powered blender and blitz. Pour mixture into icy pole molds filling only half way. Press banana pieces into the mold with some of the extra passionfruit pulp, top with more of the coconut cream blend and finish with passionfruit. Place in freezer to set overnight.
+ There’s just 4 to this recipe because we had a little extra coconut cream to use up – of course up the quantities should you wish to make more, or add in some extra banana slices and that will help extend the ingredients to make a couple more.
