PINENUT AND SUNFLOWER SEED DUKKAH
Gluten free : Dairy Free : Vegan
1/4 cup pinenuts
1/4 cup sunflower seeds
2 tablespoons sesame seeds
1/2 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon nigella seeds (optional but yum)
2 teaspoons sea salt
Place all ingredients in a large frypan on medium heat and toast 5-8 minutes or until seeds are lightly golden and spices are fragrant. Stir frequently. Once cooked transfer half the mix to a mortar and pestle or a spice grinder and blitz quickly or grind until broken into smaller crumb like pieces. Sprinkle over your favourite dishes. Store in an airtight container.
