Sandwich free school lunchbox ideas
Trialling something this week for the school lunchbox which is not having a sandwich for a week and focussing on other interesting food options in place. If you’re stuck, bored or wondering what to do instead of sandwiches give these options a try:
MONDAY: leftover schnitzel – both chicken and cauliflower – with a green salad for lunch. Recess: mandarin, capsicum and lemon honey jellies (home made – plenty of jelly recipes here).
TUESDAY: Sweet potato cauliflower cheese frittata – haven’t written this recipe as such however there are frittata recipes for you here, plus some cucumber sticks.
WEDNESDAY: Rye cruskits with butter and vegemite, some chopped carrot and capsicum too.
THURSDAY: Thermos filled with soba noodles, tofu, broth and spinach, extra raw carrot sticks on the side
FRIDAY: Lunch order – Jet usually goes for something warm on this day too during Winter – or leftover pasta from Thursday night dinner – ravioli is always a hit here and definitely with vegetables on the side as always!
Leftovers in lunchboxes really are winners for us, if you can wrap your head around having the extra ingredients in there when you cook dinner DO IT, just remember to pop it away it before dinner so that if you have hungry kids / humans it’s not all eaten.
